BANANA CAKE is something I baked the most. Not that I love to bake it so much but it’s more like I am being requested to. Everyone around me loves banana cake. I don’t have a single best banana cake recipe because there are just so many great ones. Banana loaf with walnut pieces in it, with pecans and spiced streusel topping, or like this Dorie Greenspan recipe, a classic banana cake, no nuts, and baked in an old-fashioned bundt pan.
Last week I was occupied in preparing desserts for a church event – a play based on a true story, painstakingly produced by the youth fellowship (https://www.facebook.com/watarewelookingfor). I recently took to snacking on chocolates in the afternoons. I’ll usually try to watch what I eat, so snacking on chocolate bars everyday isn’t a very healthy thing to do. But it’s a total different thing if the chocolate is of very good quality, topped with some healthful nuts and fruits. And so, I made these addictive chocolate bark.
I love anything with cream cheese. Cupcakes with cream cheese frosting, muffins topped with cream cheese filling and this brownie. If you like cheesecake AND brownie, I bet you will fall for this cheesecake brownie. It is my absolute favorite!
WHO CAN RESIST a good old crunchy chocolate chip cookie? We should all thank the creator, Ruth Wakefield. It all started when Mrs Wakefield and her husband bought a tourist lodge which was originally a toll house. They opened a restaurant and inn and thus called it Toll House Inn. One day in 1930, Mrs Wakefield decided to add some chopped chocolate to the then popular Butter Drop-Do cookie, expecting the chocolate to melt and run through the cookies but it didn’t happen. BANANA SMOOTHIE is possibly my favorite on-the-go breakfast. It only takes 5 minutes to make and 2 minutes to drink. It’s quick, healthy, provides a good dose of energy and most importantly, delicious. Smoothie is best drunk when it’s cold but I don’t like the idea of blending ice cubes into the smoothie, which can dilute the taste. One easy way to have undiluted cold smoothie (anytime) is to freeze the fruits. So I always have little bags of frozen chopped bananas in the freezer ready when I need a quick blend.
EARL GREY is by far my favorite tea of choice. The distinctive aroma that derived from the oil of bergamot never fail to delight me each time. Apart from drinking the tea directly, I almost get excited always with any desserts made from the aromatic tea. And I will jump to any recipes that are made with earl grey.
I made this little birthday cake for my friend, JSI’s daddy. JSI requested for a vanilla cake, I brainstormed for a few nights and finally decided on a yellow cake made with buttermilk (98% fat-free) and madagascar bourbon pure vanilla bean paste, a cream cheese frosting, topped with strawberries and blueberries and garnished with my home-grown mint leaves. I have to mention the mint leaves because it is the first time I grow a plant and was quite proud of it… 🙂 I am not sure how well the cake turn out but I do hope JSI’s family enjoy it, especially her daddy. I got myself a new little toy. The blowtorch. Like finally. Because I wanted to make crème brûlée and burn the meringue on lemon meringue tart for so long. It isn’t expensive but I didn’t think it was necessary until I strongly craved for crème brûlée recently and really wanted to try my hands on it.
I haven’t been to IKEA for a long time until recently, which was a really fruitful trip. I didn’t know that they actually have a section on baking utensils so I was really thrilled to discover it! I wonder if anyone notice that they have this really cute 12-hole muffin pan, which has rather deep and slender holes in the shape like cylinder. Matching paper liners are sold separately. The designs of the liners were limited though, in fact, I only saw one stripe design that comes in three different colors (blue, green and purple) in a box.
