VANILLYN TURNS ONE TODAY! To celebrate, we definitely need something nice and sweet of course. I’ve always wanted to try my hands on crepe cakes. This one, is inspired by the sweet crepes I’d eaten at Marche. I always like to order their sweet crepe with mascarpone cream and fresh strawberries. So yum! So I recreated this cake with that in mind. Mascarpone Cream & Strawberries Crepe Cake.

Strawberry, Mascarpone Cream & White Chocolate Crepe Cake
Ingredients for the crepes
1 1/2 cup whole milk
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour, sifted
1/4 teaspoon salt
1/4 cup confectioners sugar, sifted
50g butter, for greasing the pan
- Stir together the milk, eggs and vanilla extract until well combine. Add in the flour, salt and confectioners sugar and mix gently until just combine. Set aside for 30 minutes to allow the gluten to relax.
- Heat a 7-inch non-stick flat base pan. Add just enough butter to coat the base of the pan. Remove the pan from heat, pour in 1/4 cup of the batter to the pan and swirl around. Make sure the batter covers the entire pan. Bring the pan back to low heat and cook without touching for 1-2 minutes or until the surface is dry.
- Slid the crepe to a wire rack. Repeat the process with the rest of the batter.
Ingredients for the mascarpone cream
250g mascarpone cream, cold
1/2 cup heavy cream, cold
1/4 cup confectioners sugar
Place all the ingredients in a mixer with the whisk attachment and whisk until thick. It should happen quite fast. About a minute.
Ingredients for the white chocolate ganache
100g good quality white chocolate, cut into small chunks
1/4 cup heavy cream
1 tablespoon unsalted butter
Heat the cream and butter in a microwave or small saucepan. Do not boil. Pour the hot cream over the white chocolate and let it sit for a minute. Stir gently with a spatula until all the chocolate has melt. Set aside to cool, stirring occasionally until it achieve a very thick consistency.
Ingredients to assemble the cake
White chocolate ganache
Fresh strawberries, for decor
Place a piece of crepe on a serving plate or cake board. Spread a tablespoon of strawberry jam. Spread mascarpone cream. Top with another piece of crepe. Repeat the process. Drizzle the white chocolate ganache over the top and sides of the crepe cake. Place in the freezer for 30 minutes. Remove and top with fresh strawberries.
